I’m not much of a recipe posting kind of girl, but in the spirit of Losing It (Not Just Our Sanity) and healthy eating and remembering to fix myself breakfast and thinking of my husband’s favorite foods and ALL THAT JAZZ, I thought I’d post one of our favorite easy, healthy breakfasts. My friend Gretchen made this dish for me last year and I’ve changed it up a bit since then.
I don’t know about you, but we don’t have a hot breakfast every morning. Sometimes (most times?) cold cereal gets the job done. But I like to have something warm and hearty a few times a week, and my family can’t get enough of this breakfast. Best of all? It’s so stinkin’ easy.

Soaked Oatmeal Bake
½ cup butter
½ cup Agave nectar
2 eggs, beaten
3 cups oats
2 teaspoons baking powder
1 teaspoon sea salt
1 cup milk
1 cup berries (any variety)
Melt butter. Add Agave and eggs. Add other ingredients and mix. Soak overnight. Bake in greased 9-inch pie plate, uncovered, for 40 minutes at 350 degrees.

Losing It Goals:
Food: I’m still eating healthy food in small portions, and doing my best to remember to eat. I’m superuberduper thrilled to have set up our raw milk delivery from a local farmer in our new tiny town this week, along with free range eggs, a host of other raw dairy products and the option to buy pastured beef, chicken, pork, lamb. Totally awesome.
Water: I’m a fish. If fish drank water instead of swam in it, of course.
Exercise: I went skiing all day today and basically worked off enough calories to last a month. Not really, but I’m pretending.
Losing It: Here’s the truth–I’ve decided to stop weighing myself for a while. I realize this is a weight loss competition and I should know what I’m losing (or gaining), but my real goal is to get my metabolism healthy again, which may take longer than the ten weeks of this competition. I feel better and know my metabolism is working once again, and I don’t want to tempt myself to lose the ground I’ve gained because the number on the scale isn’t moving as much as I’d hoped.

Oh, how I wish I loved oatmeal, because I would love that recipe if I loved oatmeal.
I need to drink more water, too. Apparently there is this formula, you take your weight, divide it in half and that is the minimum amount of water you should drink daily. If you’re pregnant you add a quart for the baby. I probably drink HALF of that amount, shame on ME. And I’m trying to eat more healthy, too. But it’s so stinkin’ hard because I don’t want to eat anything but cheetohs right now. Gosh darnit.

Healthy metabolism is your goal not weight loss, so good job not weighing yourself as often. You can do it, you are doing it!

I think you’re smart for focusing on getting your metablism to function properly again, instead of solely concentrating on the pounds. If I can offer one suggestion, it would be to incorporate some weight lifting into your schedule. I used to have a pretty wacky metabolism, but once I started to lift weights regularly, my metabolism really kicked into gear. Lean muscle is a woman’s friend for MANY reasons.

Um,the recipe looks delightful but I’m confused. The directions call to mix the brown sugar with the butter . . .but there is no brown sugar on the ingredients list. Should it say Agave?

I am totally writing down your recipe there… I need some easy breakfasts I can basically prepare the night before. I wonder if replacing some of the milk with yogurt would work (for the whole phytic acid thing)?
And, good for you at not looking at the scale! You are so right that your first goal should be your health… and a number on a scale a somewhat distant second.

That recipe looks delicious, we do make a baked oatmeal recipe but it isn’t soaked ( and I think soaking is better) and yours looks tastier too!
Way to go on the water! I seem to go through cycles of drinking enough and then not enough.

Ashleigh, I’ve got mine in “soaking” now. I didn’t have agave…so….brown sugar it is! I cut the quantity in half though! Hopefully everyone will like it. That’d be a MIRACLE with my family!!

Well, I guess expecting 100% approval rate was a lofty goal, but no one hated it and about 1/2 reeeeeally liked it!! It’s a hearty breakfast that really stays with you. Very satisfying! I loved it and bought the agave for next time. Thx for sharing the recipe!!
